Vagabond Tales- Three Steps Forward- 2 Steps Back

Note…Harry is wearing a sweater and I have a light t-shirt. He would later shed his extra warmth.

Today we visited the United States most recent National Park. On February 15, 2019, it was renamed Indiana Dunes National Park. We found it difficult to discern the state park from the national park, as the state kept the historic trails , so we took on the Three Dune Challenge. We believe it was the longest mile and a half we have ever walked! Going up the dunes, it was walk three steps up and slide back 2. Going down, it was walk 1 step down, slide 3 more. Some of the deepest sand we had ever hiked in, that’s for sure! And really only two sky high views of Lake Michigan. Had to make a special trip by car to see it up close.

Not a great photo but a really good way to see how deep the plants have to reach for nourishment.

Our trip down to the beach was short but the one thing I had forgotten was how big the waves are on this lake…and how many skipping stones you can find.

Dinner was a quick skillet dinner using Karey Spear’s recipe with a few additions and omissions:

Sausage and Veggies in a Skillet

1 pound ground sausage browned and drained …I didn’t use spicy but it would be good

1 head of cauliflower steamed

1 small box of fresh, raw spinach

Fennel seeds…approximately 2 teaspoons

1 can of chopped tomatoes

1/2 cup Parmesan cheese

1 Tablespoon olive oil

Basil approximately 1 teaspoon

(Karey adds Quinoa and bone broth to hers but I didn’t have access to those so left them out.)

1. Brown the sausage

2. Steam both the cauliflower and the spinach

3. Mix together and add the herbs and the oil, and the unstrained tomatoes

4. At this point Karey places it in the oven with the cheese over the top to melt. I just kept in my frypan, sprinkled with cheese and put the lid back on while I put everything on the table. It was yummy.

    1. We are having a great time, Spencer! The Dunes were quite a challenge but we conquered them! There are kids at our campground this weekend riding bikes and razors. Like one big happy party!

    Also noticed the corn on the cob!!! I know that has to be super sweet corn! Lol Only we would understand that.
